Pasta Frittata

 

Pasta Fritatta

Never toss unused but cooked spaghetti

Instead store in the fridge in a sealed containter

When u can’t think of what to eat, remove the cooked spaghetti from the fridge

If it covers the bottom of a 7 inch fry pan, u have enough for a single portion

If it covers a 9 inch you have enough for a double portion

Saute 1 small red onion, chopped in the 7 inch fry pan and best quality olive oil, or 1 medium red onionin the 9 inch fry pan

Add the leftover cooked spaghettiand sauté it in the olive oil, turning freqently over medium heat

Beat 3 large eggsfor the single frittata or 6 large eggsfor the frittata for two

Add grated Parmesan, about¼ cufor the single or ½ cufor the double, to the egg mixture

What you got in the fridge or growing in the back yard—mixed herbs?  Chop and add them to the egg mixture

Cover the now crispy pasta with the egg mixture, making sure to cover the pasta evenly

Cook over medium to low flame in nonstick or well seasoned cast iron pan

When the bottom is cooked, place the pan under the broiler with a sprinkle of additional Parmesan to cover

Leave in broiler until the top gets a bit browned
