Spaghetti con Sardine

Spaghetti with Sardines

 

This is a version of a famous dish from Palermo

I do not have a fish monger in my neighborhood I like, and this can easily be made with high quality canned sardines

Soak ¼ cu of raisins in warm water

In a small pan brown ¼ cu pine nuts and ¼ cu breadcrumbs in a little best quality olive oil

In a larger pan brown 3 cloves garlic in 4 tbs best quality olive oil and then discard the garlic

Add to the pan four tins of sardines and heat them up over low flame, breaking them into bite size pieces  

Add the drained raisins, pine nuts and breadcrumbs to the sardines and mix well

Add to a lb. of hot whole wheat spaghetti which was just cooked al dente

Sometimes I drizzle a bit of best quality olive oil as I mix, but not very much

Serves four
